The Art of Honey

The Art of Honey only sells Raw Honey, this is honey collected directly from the beehives without any kind of processing, unadulterated, unblended and without any cruelty to the bees.
 
Procuring Honey💜 
We procure raw honey only from ‘passionate’ bee keepers, as the love/energy one feels in what they do, highly matters in everything The Art of Honey involves in. Also, we procure honey only from within India. We also collect raw honey from around the world which we keep in an Archive in our studio.
 
Filtering Honey👍🏽
As shown in the video, you see us filtering raw honey with a strainer to let all the good stuff pass through, like pollen, propolis, and other micro particles beneficial to ones health, while separating the bee wax impurities, some dead bees, and other particles.
 
Purity of Honey🍯
 
The Honey we sell is made from nectar of flowers, honeydew on trees, or leaf petioles, and they are collected only from organic farm areas or forest areas. None of the variants of raw honey is adulterated, blended, micro filtered or infused with anything to replicate or alter the natural taste of honey.
          This also means, every batch of honey we receive, from different periods of extraction, may have a slight or drastic change in the taste profile of the same variant of honey, especially forest honey. For example, last years peacock chaste honey was so uniquely sweet and this years batch tasted bitter sweet.
           This happens because bees take nectar from whichever flowers bloom, which depends on mother nature, and I simply collect what mother nature gives, educate people about raw honey, and sell them.
 
Honey Bees🐝 
The average honeybee hive has around 50,000 bees in it. Bees have a lifespan of around 4–6 weeks. And the queen, amazingly, lays between 1,000 and 1,200 eggs every day. Up to 1,500 in springtime. When a bee dies, the other bees discard them. However, sometimes dead bees are usually also found in the bee hive before other bees discard them or put propolis(bee glue) around it and wall it off.
           When bee keepers collect honey, it also comes with those dead bees if any. This is mostly the case with wild forest honey extracted. Other than that, when bee keepers extract honey from the hives into drums, there is loose honey. And loose honey invites robber bees from other hives/bee colonies. Oh yes, humans are not the only ones lol. They are the usual ones drowning in their own creation during the honey extraction process.

We are connected with bee keepers, and some residentials who extract honey from all over. As mentioned in the beginning, these people are so passionate about what they do, its an other worldly experience to feel their humble and simple attitude towards life and what they do for a living.
            Bee keepers value their bees health more than honey and money, because if their bees die or are unhealthy, then it affects honey production and how much they earn from bee keeping. So there is no intentional harm done to any bees. I know bee keepers who give fruits to their bees at times, and some who don’t take honey from other bee keepers who collect honey in unethical ways.💜🌻🍀🙏🏼🥰

Fine Quality Honey selected from Pristine Nature

The Art of Honey offers seventeen different tastes of Honey. These have been carefully selected from many beekeepers living in the pristine nature of Ukraine and the mountains of Spain. Ukraine pretty unknown in western Europe, is little developed in its countryside and so the Nature is full of flowers and insects. It’s very common for people to live in small villages in this pristine Nature and live simply from their vegetable patches, fruit trees and their beehives. 

In Spain in the area between Valencia and Alicante on the eastern coast, there are unending orchard’s of Orange and Lemon trees. We have found high in a small mountain village a family of beekeepers now with the fourth generation. We are pleased to add Mediterranean honey to our collection.

We were able to select Honey almost as we would select wine travelling through France. From the Carpathian mountains in the east to the vast plains of central Ukraine, we contacted small beekeepers. We tasted a variety of honeys and the beekeepers usually knew pretty accurately from which flowers the bees had taken the honey in a particular season.

By living close to nature, the farmers were in tune with the kind of flowers that grew up in the different seasons. And by moving their hives they could quite carefully predetermine the final taste of the honey.

An Important Disclaimer.

Our honey is pure, directly as the bees created it. Nothing is mixed. Nothing is heated beyond 38 degrees. It naturally crystallizes from liquid to solid. When honey stays liquid it could be a sign that the honey has been heated beyond 38 degrees and this could effect the natural goodness of the honey.

Natural, Untreated Honey
Our honey is pure, directly as the bees created it. Nothing is mixed. Nothing is heated beyond 38 degrees. It naturally crystallizes from liquid to solid.
 
Natural, untreated honey is full of unique ingredients. Hence we are collecting our honey directly from beekeepers, Apiary’s with several generations of experience. In its natural form honey is crystalline at room temperature.
 
The honey which is available in shops is liquid and golden coloured because it went through a heat treatment. Crystallized honey is less manageable, therefore large honey factories use pasteurisation.     
      
The honey can be heated to more than 70 degrees, slowing down the crystallization, unfortunately it destroys the special aroma of honey and the vital enzymes responsible for activating the honey’s vitamins and minerals.
      
Often many kinds of honey are mixed together as part of the pasteurisation process, to create the poor mixture without aroma or much taste, but sweet which we have been raised to know as “Honey.”

Raw Orange Blossom

One of the classic honeys of the Mediterranean, raw orange blossom honey differs from other honey’s in that it has not been heated nor has it been filtered. It is the honey that goes directly from the honeycomb to your home, maintaining all its properties.

Raw orange blossom honey is the most characteristic of the área around Valencia in which there are large areas of orange trees. It is a honey with a mild taste and a pleasant smell. It is one of the softest honey’s that can be tasted, both for its spectacular floral aroma and its sweet taste. Its color is light amber and practically transparent when it is liquid and a white tone when it crystallizes.

Lemon

This honey is obtained from the blossom of the lemon trees, it is harvested in spring, normally in the months of April and May. Its color is very light yellow and its aroma is very mild with a sweet flavour with an acid touch. It crystallizes slowly and its crystal is very fine. The area where this type of honey is usually grown is in the province of Alicante.

Lemon honey is the honey that we usually recommend for those who start in the world of honey because it is a very soft honey on the palate, I also recommend it for the same reason for children.  It is a suitable honey to take with an infusion or with hot milk.

Lavender

Lavender honey is a very well known and very popular honey. No wonder, because the amber-colored honey comes with a whole bouquet of different taste nuances.  

The velvety taste combines smoky depth with light bitter tones, refreshing citrus notes and pleasant sweetness. A very aromatic honey that fills the entire mouth.  Lavender honey also has great healing properties as it supports tissue regeneration. It is used to heal burns, insect bites, and wounds.

Supreme

A supreme honey experience.

The most dominant characteristic of this honey is its texture, a velvety, thick consistency that flatters the palate.

In this supreme honey are three very different flavours: Acacia, Buckwheat and Sunflower. From the Acacia we get the velvety, rich feeling. Buckwheat contributes a deep and aromatic taste, and Sunflower adds cream and fruitiness. A treat for every Honey Gourmet.

Wild Meadow Flowers

Collected from undisturbed pristine meadows
of wild flowers giving this honey a characteristic taste. 

A soft, light flowing creamy texture and a subtle fragant taste.

Almond

Almonds are the first trees to blossom after the winter time. For the bees its the first fresh source of nectar and the start of the season. Harvesting Almond honey however requires sure instinct and right timing as it can easily happened that  a frost occurs and destroys the blossoms. Therefore Almond honey is a rare speciality.
Almond honey is a tender sweet  honey with a few bitter tones, making it a delicate pleasant taste. It has a light, slighty yellow colour, fine crystalization, and improves digestion.

Thymian Honig roh

Thyme

The incomparable herb also provides a wonderfully aromatic honey that honey lovers appreciate.

Thyme honey has a velvety, finely spicy aroma. The color is reminiscent of dark amber and can almost go reddish. Its smell, which has a clarifying effect, is also typical.

Thyme honey has a calming effect on the nervous system, the intestines, and can even help with rheumatic complaints.
Those who like spicy honey will love thyme honey.

Acacia

A very well known and fine honey. We offer a particularly fine quality.

Due to it’s particular taste reminiscent of sweet vanilla it is very popular with children.

It’s considered hypoallergenic and therefore the most suitable honey for people with allergies.

Acacia Honey is known to stay liquid for a much longer than other honeys so used as a sweetener.

It contains many powerful antioxidants when applied to the skin it can help to improve acne and wound healing.

Coriander

A rare and unique taste. This special honey has a fruity, aromatic taste with a slight aniseed flavour.

It is a speciality for every honey lover. Coriander honey has a light colour, wondeful texture and great benefits for the digestive system.

Eucalyptus

Eucalyptus honey has a strong dark color and a distinctive smell. It has a spicy-fresh taste that has nothing to do with cough drops, which we might think of at first. Friends of forest and lime tree honey will like this honey.

Eucalyptus honey has many good healing properties for the body. The eucalyptus oil contained in the honey helps with colds and can help with expelling kidney stones  and infections of the urinary tract.

Rosemary Honey Raw

Rosemary

The light, flowery, slightly spicy honey has a vitalizing effect and is ideal as a special breakfast honey. The blue rosemary flowers offer the bees a rich supply of nectar.

It has a unique taste and odor reminiscent of flowers.

Rosemary honey is rich in lithium, which supports the memory and has a stabilizing effect on the psyche, it also calms the digestion.

The region around Valencia from where we collect is known for the splendor of colors of the wide rosemary fields and the rosemary honey is a local specialty.

Buckwheat

A particular taste for honey lovers.

Buckwheat honey is immediately recogniseable by its typically dark colour and particular smell.

It comes from the dark nectar of the Buckwheat flowers and contains many healthy antioxidants.

The texture is thick and creamy with an aromatic, malty taste. Buckwheat honey is said to be one of the most healthy honeys and often used to strengthen the body in the face of disease.

Flower

From the wild and pristine flowers of Ukraine’s Kalpathen mountains.

The bees collect the nectar for this exceptional flower honey, creating a honey that supplies the body with information of many different pollen.

This strenghtens the immune system and in a long term use can help reduce allergies.
The taste is well balanced between sweet, fruity and aromatic.

Due to Ukraine’s rich profusion of flower this honey has a lot more depth then we are used to from regular flower honeys from the supermarket.

Sunflower Buckwheat Mixture

Our mix of Sunflower and Buckwheat in equal proportions.

Here we have the particularly dark and aromatic buckwheat complemented by the creamy mild and sweet sunflower.

The consistency is thick, creamy, with bigger sugar crystals and a caramel-brown colour.

The Sunflower and Buckwheat honey mix is a real all-rounder that can add a little extra to fine meals, desserts and drinks.

A creamy, fruity and aromatic honey that suits all tastes and is neither too sweet, nor too strong.

Bronze Quality

Lime Tree

Lime Tree Honey has a very distiguishable minty taste that is delicious in tea. When the lime tree blossoms it produces large quantities of nectar and exudes a sweet, charming scent that is irresisteable for the bees.

It is commonly used to mitigate colds and fevers and supports the heart. Its said to have a calming, sleep promoting effect which can can help chronic sleep disorders. It crystallises in big sugar crystals and has a dark yellow-orange colour.

Raps Seed

The cream of honey, particularly white in colour, rich and creamy, with a butter-like consistency.

Rapeseedhoney melts in your mouth, revealing its fine nuances. The taste is mild-sweet with a slight hint of pepper.

The Rapeseed flower has large amounts of nectar which crystalises very quickly and is therefore usually creamy.

Rapeseed honey is said to support the heart, brain activity and support bone development.

Sunflower

Honey as you imagine it.
Even though the sunflower is very known, Sunflower honey is quite rare in Germany, even though its well know. This is because sunflower needs certain conditions to produce nectar which are often not given when the plant is produced for commercial use. 

The Honey has a wonderful bright yellow colour and slightly spicy smell that reminds of frankincense. Sunflower honey is sweet, pleasant and slightly spicy. The texture is gorgeously thick and fine-creamy. No bear or honeylover could resist this honey that is everything you would want a honey to be.
